Skillet Stroganoff Recipe



Ingredients:
1 pound hamburger1 can cream of chicken or cream of mushroom soup1/2 cup sour cream
2 tablespoons chopped onionseasoned salt noodles, cooked and drained
Cooking Instructions:
Brown hamburger and onions; season. Drain off fat. Add noodles and soup; heat. Add sour cream. Serve at once

Meal-in-One Casserole


Ingredients:
1 medium onion, chopped1 pound ground beef1 can condensed vegetable soup
1 can spaghetti & sauce1 teaspoon salt1/4 teaspoon pepper
Cooking Instructions:
Brown ground beef and onion. Add rest of ingredients. Pour into a greased casserole dish. Bake for 1 hour in a 350 degree oven.

Linguini With Clam Sauce


Ingredients:
5 cloves garlic1/4 cup olive oil3 cans clams, drained (save broth)1/2 cup white wine1/2 to 3/4 cup clam broth
1/2 cup parsley1 teaspoon basil1 teaspoon oregano1 teaspoon pepperParmesan cheese
Cooking Instructions:
Saute garlic in olive oil; add remaining ingredients. Simmer 10 to 15 minutes.
Serving Suggestions:
Serve over hot linguini; sprinkle with Parmesan cheese.

Cavatini Recipe



Ingredients:
1 (32 oz.) jar spaghetti sauce1/2 pound hot sausage or ground pork1 small can mushrooms1 small onion, diced1 small green pepper, diced1 pound hamburger
1/2 pound pepperoni3 oz. mostaccioli noodles, cooked3 oz. rotini noodles or Italian noodles, cooked2 oz. Mozzarella cheese, grated
Cooking Instructions:
Brown hamburger and sausage with onion and pepper; drain grease. Add sauce, mushrooms and pepperoni and simmer for 1 hour. Add cooked noodles. Place in glass pan (9x13-inch) or large roaster. Top with Mozzarella cheese and place in oven 10 to 15 minutes at 350 degrees.

Chinese Veggie Noodles Recipes


Ingredients:
1 package Oriental ramen noodles1 cup frozen stir-fry vegetables1-1/2 teaspoons vegetable oil
1 tablespoon soy sauce, opt.saltground black pepper
Cooking Instructions:
Cook noodles in water according to package directions; drain. Add seasoning packet. In frying pan, saute vegetables in oil until heated through. Add to warm noodles. Sprinkle with soy sauce; stir together. Season with salt and pepper

Beer Noodles Recipes



Ingredients:
1 package ramen noodles (any flavor) broken up2 tablespoons vegetable oil1 (10.5 oz.) can condensed onion soup
1 soup can beerchopped green onions, opt.
Cooking Instructions:
Save ramen seasoning packet for another use or discard. Heat oil in a saucepan over medium heat. Add noodles and cook until lightly browned, stirring constantly. Add soup and beer. Cover; simmer 10 minutes. Drain noodles and serve, garnished with green onions.

Sweet Pepper


2 medium leeks, green tops trimmed, split up to the root ends, cleaned
1 Tablespoon olive oil
1 large red bell pepper
1 large yellow bell pepper
4 Tablespoon unsalted butter
1 large clove, garlic, minced fine
1/3 cup dry vermouth
salt and freshly ground pepper to taste
12 oz. fresh fettuccine
1 Tablespoon fresh thyme leaves
1 cup Apple Wood chips
Prepare a medium−hot fire in the grill. Coat the leeks with olive oil.
When the coals are covered in gray ash add the presoaked chips to the fire.
When the chips start to smoke place the leeks and peppers on the cooking
grid directly over the fire.
Grill, turning as needed, until leeks are tender and golden brown, about
10−12 minutes, and skin of peppers is charred, about 15 minutes. Remove the
leeks from grill and let cool. Remove the peppers from the grill and place
in a paper or plastic bag and seal; set aside and allow to steam.
When cool, trim root ends from leeks, then cut into thin strips. Peel and
seed bell peppers and cut into thin strips.
Meanwhile, heat a large pot of water to boiling.
Heat butter in a large skillet over medium heat. Add garlic and cook,
stirring frequently, until pale golden. Add vermouth, and reduce to syrupy
consistency. Stir in leeks and peppers and season with salt and pepper.
Salt boiling water, add pasta, and cook until tender but still firm to the
bite. Drain thoroughly, add to skillet and toss well. Sprinkle with thyme
and serve hot.

Memphis−Style Barbecued Ribs


3 Pound Racks baby back ribs
2 Teaspoon Salt
2 Teaspoon Coarse ground black pepper
Apple Juice for Basting
1 Cup Red wine vinegar
2 Cup Onion, chopped
2 Garlic, cloves, minced
1/4 Cup Mustard, yellow prepared
1/2 Cup Brown sugar, packed
2 Cup Ketchup
2 Lemons, thinly sliced
1 Teaspoon Louisiana hot sauce
Trim as much fat as possible from ribs. On bone side, work knife tip beneath
membrane that covers bone until finger tips can be worked beneath rack
membrane, loosening enough to get firm grip. Then peel membrane off rack.
With paring knife, scrape any fat away from bone.
Sprinkle ribs on both sides with even, light coating of salt and pepper.
Place ribs, bone−side−down on grill. Grill over low fire 1 1/2 hours, turning
every 15 to 20 minutes, replenishing fire as necessary. Baste with apple
juice at every turn during first half of cooking period either by brushing
on, or simply spraying apple juice from spray bottle. If smoking with
indirect heat, turn at 1 hour intervals, cooking 4 to 6 hours.
Combine vinegar, onion, garlic, mustard, sugar and hot sauce in blender.
Blend until smooth. Place in saucepan and add ketchup. Simmer 20 minutes.
Add lemon slices. Stir occasionally to keep from sticking. Use sauce as
frequent baste for last half of cooking period, whether grilling or smoking,
being careful not to burn ribs. Serve remaining sauce on side.

Watermelon Barbecue Sauce



1 − 6 Pound Seedless Watermelon chunk
8 Ounces Tomato Paste
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
2 Cups Firmly packed brown sugar
1/2 Cup Sherry
2 Teaspoons Lemon juice
1 Teaspoon Liquid smoke
Cut the melon into pieces and place in a saucepan. Cook it uncovered over
medium heat until the melon is the consistency of applesauce (approximately
2−3 hours). Stir it occasionally. Add remaining ingredients. Simmer
uncovered over low heat for 2 hours. Allow to cool to room temperature
before using.

Stuffed Peppers


4 bell peppers
2 c cooked brown or basmati rice
1 can black beans, drained
1 onion, minced
3 ears of corn, (cut off the cob)
1 can tomatoes with chilies
1 t cumin
1 t chili powder
1/2 t oregano
1 1/2 c tomato sauce
Remove top and seeds from peppers making a bowl shape. Steam
bell peppers until slightly tender. Set aside. Mix remaining ingredients
together except for tomato sauce. Fill peppers with rice mixture and
place in oiled casserole dish. Pour tomato sauce over top. Bake at
350 degrees for about 20 minutes.

Ratatouille


3 T olive oil
2 cloves garlic, minced
1 red onion, chopped
1 eggplant, cut into 1 inch cubes
2 red peppers, chopped
2 c sliced zucchini
2 c diced tomatoes
1 t oregano
2 t basil
In a large skillet, sauté garlic and onion in olive oil until slightly tender.
Add eggplant and red peppers and sauté for a few more minutes.
Add remaining ingredients and cook over low heat, covered, about 10
minutes or until vegetables are tender.
Serve over rice as a main meal or can be used as a side dish.

Tabouli Stuffed Tomatoes


1 c bulgar wheat
2 c distilled water
1/2 c fresh parsley, minced
1 T Bragg Liquid Aminos
2 large tomatoes, chopped
1/2 c scallions, chopped
1 T extra virgin olive oil
2 T fresh mint, minced
4 tomatoes
Soak bulgar in distilled water for one hour. Drain and pat dry. Add
remaining ingredients (except the 4 tomatoes) and mix well. Cover
and refrigerate for at least one hour.
Core tomatoes and scoop out enough pulp to make a well. Fill with
Tabouli mixture. Place on a bed of lettuce and serve.

Fiesta Rice Casserole


Salad:
1 c basmati rice
3/4 c water
1 c fresh corn
1/4 c sliced black olives
1/2 c each: red onion, red bell pepper, yellow bell pepper, orange bell
pepper, and fresh cilantro
Dressing:
1 clove garlic, minced
1/4 c olive oil
2-3 T freshly squeezed lime juice
1/2 t cumin
Bring water and rice to a boil, turn heat to low, and simmer for 15
minutes. Remove from heat and allow to cool. Add vegetables and
stir well.
In a small bowl combine dressing ingredients. Pour over the rice
mixture and toss well. Serves 4

Butternut Squash Soup


1 c carrots, peeled and sliced
1 c chopped onion
1 clove garlic, minced
2 T olive oil
1 T minced ginger
2 t curry powder
1/4 t cinnamon
1/8 t nutmeg
2 medium butternut squash, peeled, seeded and cut into chunks
3 c organic apple juice
In large saucepan, over medium-high heat, cook carrots, onion and
garlic in oil until tender, about 5 minutes. Add ginger, curry, cinnamon
and nutmeg; cook for 1 minute. Add squash and apple juice. Heat to
a boil. Cover; reduce heat. Simmer for 15 minutes or until squash is
tender. In blender or food processor, puree soup, in batches, until
smooth. Return to saucepan; heat through. Serve hot or chilled.
Makes 8 (1 cup) servings.

Quick Minestrone Soup


1/2 c onion, chopped
1/2 c celery, chopped
1/c c carrots, chopped
1 clove garlic, minced
1/4 t thyme
3/4 t basil
1/4 t oregano
1 c cabbage, chopped
11/2 c garbanzo beans (canned, organic)
2 c red kidney beans (canned, organic)
1 can organic Italian tomatoes, chopped
6-8 c of Homemade Vegetable Broth
Sauté in 1/4 c of the broth: onion, celery, carrots, and garlic until
onion is tender. Add remaining ingredients and simmer for about 20
minutes. Start with 6 cups of broth, and add more if needed.

Chicken with Peaches and Basil


Ingredients
4 Boneless Chicken Breast Slices
2 Fresh Peaches
1 Egg
2 Tbsp. Butter
3/4 Cup Water
1 Onion, Chopped
Zest of 1 Lemon (1/4 Tsp.)
1/2 Cup Fresh Basil Leaves, Chopped
Variation: Dredge Chicken in Flour after
brushing with egg.
Use Shallots instead of onions.
Use Chicken Broth instead of Water. Use
1 small can of peaches instead of fresh
peaches.
Directions
Brush Chicken with Egg. In a large frying pan, saute
over a medium heat in Butter, until done,
approximately 30 minutes. Turn over a couple of
times to cook both sides evenly through. Remove to
a temporary dish.
Peel and slice the peaches.
Pour Water into frying pan. Add Peaches, Onions and
Lemon Zest. Cook, stirring until thickened. Stir in
Basil and Salt and Pepper to taste.
Place Chicken in serving dish and pour sauce over it.
Serve with Rice.

Chicken Marengo


Ingredients
4 Boneless Chicken Breast Slices
1 Onion, thinly sliced
1/2 Cup Olive Oil (8 Tbsp.)
1/2 Cup Vinegar
2 Garlic Cloves, Crushed
1/2 Cup Fresh Parsley, Chopped
1 Can (14-16 oz) Tomato Sauce
1 Cup Water
4 Servings of Rice
Variation: Use Chicken Stock instead of
Water. Add herbs such as 1/2 Tsp. Thyme
and 1 Bay Leaf to the simmering frying pan.
Directions
In large frying pan, saute Chicken in Olive Oil with
Onion. Add Vinegar, Garlic, Parsley, Tomato Sauce
and Salt and Pepper to taste.
Cover and simmer about 1 hour, until ingredients are
tender. Remove meat. Strain the sauce and return the
strained sauce to the frying pan. Reduce 5 minutes.
Place rice in a serving dish, and pour the sauce over
it. Serve with rice.

Chicken Kiev

Directions
Roll the butter slices in mixture of Parsley, Garlic and
Salt and Pepper to taste.
Roll chicken breasts around butter slices.
Brush chicken rolls with beaten egg. Roll in
Breadcrumbs and saute in Olive Oil, turning to cook
evenly on all sides.
